How to make Vegetable Egg Fried Rice

Long grain Basmati rice or any other Long Grain Rice – 1 cup

Chopped Onions – 1 medium

Chopped Carrots – 1 big

Beans finely chopped – 8 to 10

Eggs – 2

Oil – 4 to 5 tbsp

Soy sauce – 2 tbsp

Chilly  sauce – 2 tbsp

Pepper Powder –  1/2 tbsp

Salt – to taste

Preparation Method

Here i have directly pressure cooked Basmati rice with less water for 2 whistles. You can also boil the rice with little salt and 1 tbsp into each grain that’s almost cooked separate. Now be careful not to overcook rice.

After you pressure cook it. You can spread in a muslin cloth or a plate to make it cool. Note that each and every rice are to be separated not to be sticky.

In a kadai add oil now beat eggs with salt and stir well until they are scrambled.

Add onions, all vegetables and some salt  fry it until it’s tender but crispy .

Add Soy sauce, chilli sauce and 1/2 tbsp Pepper and saute the vegetables well for few more mins.

Now add the rice and stir it to fry for a few mins.



Add some more pepper when it’s needed.

Now Fried Rice is ready to be served hot.

Fill your lunch box with some murukku or chips as side dish.
