Ingredients needed

   Rice -1 1/4 – 1 1/2 cup
   Tamarind – 70 grams
   Oil – 50 ml
   Required Salt needed

Spice powder or Podi
Fenugreek seeds – 1 tsp
White sesame seeds – 1 tsp
Coriander seeds – 2 tbsp
Red chillies – 5
Channa dal: 1 tbsp
Urad dal: 1 tbsp
Hing: one pinch
Curry leaves: one handful

For the seasoning

   Mustard – 1 tbsp
   Urad dal – 4 tbsp
   Channa dal /Bengal gram – 4 tbsp
   Red chillies – 4 (break it into 2)
   Asafoetida – 1/2 tbsp
   Turmeric powder – 1 tbsp
   Roasted peanuts- 100 grms
   Curry leaves – little

For the rice (for mixing)
  Sesame seed oil-2 tsp 


Just dry roast fenugreek seeds, coriander seeds and red chillies till you get a nice aroma. Dry roast sesame seeds separately and grind everything together in a mixer. Our spice powder for puliyodharai is ready. Just keep it separate.

Cook rice so that each rice grains gets separate.
Now you can just soak tamarind in hot water(about 2 cups ) and extract up 2 cups of thick juice from it. Discard it from the pulp.


Heat oil and now add ingredients that are mentioned under seasoning. You can remove red chilli and add back to oil in order to prevent it from getting burnt.

When dal turns up golden brown then add thick tamarind extract, salt and allow them to boil on medium flame.

Switch off when it thickens and oil must ooze out.

Now our tamarind paste or pulikachal is ready. Lets see on how to combine it with rice.

For mixing the rice

Spread rice on to your plate to cool. When its warm, add 2 tbsp sesame seed oil and 1/2 tbsp turmeric powder and combine it gently without breaking up the rice.

Once it cools, add spice powder, tamarind paste and combine its rice gently. Adjust its spice powder and tamarind paste as per your taste.
Yummy Tamarind rice or Puliyodarai is ready to be served. We enjoyed Puliyodarai with appalam.
