How to prepare Prawn pickle

For Marinating and Cooking Prawns

250 grams small prawns
2 tbsp salt
1 tbsp turmeric
1 tbsp red chilli powder
¼ cup vegetable oil
For the Pickle
60 grams ginger
60 grams garlic (weighed after peeling)
20 green chillies, chopped
¼ cup vegetable oil
¼ cup – ½ cup vinegar

Masala Powders
1½ tbsp Salt
1 tbsp garam masala
1 tbsp red chilli powder
2 tbsp black pepper powder
2 tbsp turmeric

Clean, Peel and de-vein the prawns. Add turmeric and salt and mix it well. Set it on to a strainer for excess water into prawns to drain. Allow it to marinate for about 30 mins.
Heat quarter cup of oil into a pan and add in the prawns and the red chilli powder. Fry it on a low flame for 5 minutes until cooked. Remove from heat and set it separate.
Add remaining quarter cup of oil into a pan and add crushed ginger and garlic mixture. Saute it for 2 mins. Add chopped green chillies and continue it to saute until garlic and ginger are roated nicely. Saute it about 5 mins on medium flame.
Add in the masala powders and the salt and fry it for a minute.
Add prawns,vinegar and quarter cup water. Dont add all of vinegar at once. First add 1/4 cup of vinegar and taste it. Add more if you need it. Let it simmer and cook for 5 mins.
After 5 minutes, the mixture must become slightly dry and the oil must start to float on top completely. Switch off the flame and allow it to cool for an hour.
Transfer this mixture to a ceramic or a glass jar. You can now store it refrigerated for up to a month.
