How to prepare Prawn ghee roast
For Masala Paste
2 ripe tomatoes
7 cloves garlic
1 inch piece ginger
2 tbsp black pepper
1 tbsp fennel seeds (sombu)
2 onions, sliced
1 tbsp red chilli powder
1 tbsp turmeric powder
1 tbsp salt
2 tbsp peanut oil or vegetable oil
2 sprigs curry leaves
4 tbsp ghee
250 grams cleaned, de-veined prawn
Take all masala ingredients into mixie jar and grind it to a smooth paste and keep it separate.
In a pressure cooker add in sliced onions, ground masala, red chilli, turmeric powder, salt, oil and 3 tbsp water.
just cover the pan and cook it for about 7 mins on medium flame. Remove it from heat and wait until the pressure release. Set it separate.
Now take a pan and add cooked masala and cleaned prawns to it. Add curry leaves and two tbsp ghee. Saute the mixture on a medium flame for 5 mins.
Add in two more teaspoon of ghee and roast till the prawn is completely cooked and the masala is dry.
