How to make Kerala style Egg curry

Ingredients

To Fry Boiled egg:

Oil: 2 to 3 tbsp
Chilli powder:1/2 tbsp
Coriander powder: 1/2 tbsp
Turmeric powder: 1/4 tbsp
Salt: Required salt

To prepare egg curry:

Oil: 2 to 3 tbsp
Mustard seeds: 1/2 tbsp
Cumin seeds: 1/2 tbsp
Chopped onions: 1 no
Tomatoes chopped: 1 no
Green chillies: 2 slit
Required water
Chilli powder:1 tbsp
Coriander powder: 1 tbsp
Turmeric powder: 1/4 tbsp
Salt: Required salt
coconut milk: 1 cup

Method:

Take a heated kadai. Add 2 to 3 tbsp oil to it.

Add 1 tbsp chilli powder, coriander powder, turmeric powder, salt.

Saute all the masalas well in the oil.

Make sure you dont burn the masalas.

Now add the boiled eggs into it.

Fry it well.

Eggs are fried well into this masalas.

 

To prepare egg curry:

Into a heated kadai add oil.

Add mustard seeds and wait until they splutter

Add 1/2 tbsp cumin seeds.

Add chopped onions to it and add ginger garlic paste and saute until the ginger garlic
paste raw smell goes off.

Add 2 chopped tomatoes and slit green chillies.

Add little salt to it to cook the tomatoes well.

Now add 1 tbsp chilli powder, coriander powder and turmeric powder to it.

saute until its raw smell goes off.

Add little water to combine all the masalas well and saute it.

Add one cup coconut milk to it. Mix it well.

Add required salt and mix it well.

Before the curry gets boiled. At this consistency add the fried eggs.

When you curry starts to boil. Add curry leaves.

Kerala Egg curry is ready.

It goes well with Appam, chapathi, parotta, Dosa, rice.
