How to make Kathirikai Kara Kuzhambu

Brinjal- ½ kg
Tamarind-1 lemon size
Salt to taste
Coriander leaves / Cilantro-for garnishing
Oil (try to use Gingelly Oil / Nallaennai)- 3 tbsp
Coriander powder / Malli – 2 tbsp
Dry Red chilli-5
Mustard seeds / Kaduku-1 tsp
Asafoetida / Hing- ¼ tsp
Curry leaves-2 spring
Into Kadai fry the Brinjal cubes well until its color changes well.
Keep the fried Brinjal cubes separate. Into the same kadai add mustard seeds allow them to crackle.
Now add chopped onions saute it well and add tomatoes saute it well by adding little salt.
Saute it until the tomatoes are well mushy.
Add fried brinjal to it and saute it again.
Add all the required masala and saute it until its raw smell goes away.
Add water and cook until your curry is cooked thick.
Garnish it with curry leaves and coriander leaves.
Now your Kathirikai Kara Kuzhambu is ready.
