How to make Kadai Mushroom

Button Mushroom – 200 grams
Onion – 1 cubed
Capsicum – 1 cubed
Oil – 2 tbsp
Onion – 1 cup finely chopped
Ginger-garlic paste – 1 tbsp
Tomato Puree – 1 cup
Cream (malai) or curd – 1 1/2 tbsp
Chilli powder – 1/2 tbsp
Turmeric powder – 1/4 tbsp
For the Kadai Masala Powder
Coriander seeds – 2 tbsp
Cumin seeds – 1/2 tbsp
Red Chillies – 3-4
Whole Black Peppercorns – 1/4 tbsp
Cloves – 2
Cinnamon – 1/2 inch piece
Cardamom – 2
Bay leaf – 1
For the seasoning
Oil – 2 tbsp
Cumin seeds – 1 tbsp
Dry Kasuri methi – 1 tbsp
Clean and cut each mushroom lengthwise into half.
Cut one onion and capsicum into cubes and keep it separate.
Blend 2 to 3 ripe tomatoes as we need a cup of tomato puree.
Heat 2 tbsp oil into pan and sauté cubed onions until it’s translucent. Remove them from pan.
Into the same pan, sauté capsicum till half cooked and removes away from the pan
Add more oil when needed and saute mushrooms till all the water from the mushrooms evaporate and until turns light brown.
Preparation of Kadai Masala Powder:
Roast coriander seeds, cumin seeds, whole black peppercorns and red chillies all together.
Dry roast cinnamon, cloves, cardamom and bay leaf together.
Dry grind both together to a fine powder. Here is our Kadai Masala Powder.
Method to make Kadai mushroom:
Into a heated pan, add cumin seeds when until it sizzles, add finely chopped onions. Saute until onions turn golden brown. Add little salt to increase this process.
Add ginger garlic paste and saute till the raw flavor of the ginger garlic goes away.
Add tomato puree, turmeric powder, chilli powder, kadai masala powder and salt if needed.
Cook till tomato mixture oozes out oil. Lower the flame, add curd or cream and cook for another few minutes.
Add onions, capsicum and combine well and cook it for 2 to 3 mins on medium flame.
Add mushrooms, combine well and cook for another 2 minutes.
Add a cup of water and simmer till the gravy thickens and leaves oil.
Rub kasuri methi between on to your palms and garnish it with kadai mushroom masala with it.
