How to make Inji Thogayal

Ginger, chopped – 1/2 cup

Green chilli – 5

Tamarind – 1 tbsp, packed

Urad dal – 1 & 1/2 tbsp

asafoetida – 1/4 tbsp

Jaggery – 1/2 tbsp

Oil – 1 tbsp

Salt – As needed



Scrape the skin of ginger with a paring knife and chop it well. Gather many other ingredients needed.

Heat a Kadai, add oil, and roast with urad dal and asafetida until urad dal turns light golden.

Add green chilli, chopped up with ginger and cook it for ½ minute into a medium flame.

Cool down into a plate and grind it well with jagger without water. Add little water late and grind coarsely.
