How to make Chicken Dum Biryani-New year special
For cooking rice:
Basmati rice: 2 cups for 2 members
Star Anise: 1 no
Cloves: 2 nos
Cinnamon: 1 no
Bay leaves: 1 no
Cardamom: 2 to 3 no
Salt: As Required
To prepare biryani masala powder:
Cardamom: 2 no
Cinnamon: 1 no
Cloves: 2 no
Marinated chicken for biryani:
Cleaned chicken: half cup
Curd: 2 tbsp
Coriander powder: 2 tbsp
Chilli powder: 1 tbsp
Garam masala: 1 tbsp
turmeric powder: 1/2 tbsp
Salt: As required
To prepare biryani
Oil or ghee: 3 to 4 tbsp
Onions: 3 to 4 no chopped
Tomato: 3 nos chopped
Green chilli: 2 nos
Ginger garlic paste: 2 to 3 tbsp
Chopped coriander leaves: handful
Boiled basmati rice: 80% cooked
To cook basmati rice:
Into a vessel add required water and add the biryani spices mentioned in for cooking rice ingredients table.
Add required salt. Once the water starts to boil.
Add soaked basmati rice to it.
Cook it until your biryani cooks for about 80 percent.
To prepare marinated chicken:
Into a wide vessel add 2 tbsp curd.
Add 1 tbsp chilli powder, garam masala, 1/2 turmeric powder, 2 tbsp coriander powder, 1 tbsp garam masala, salt as required.
Mix the chicken well into the paste and keep it aside for about 20 to 30 mins.
To prepare chicken dum biryani:
Into a wide vessel add oil or ghee.
Add the powdered masala spices.
Now add chopped onions, green chilli and add ginger garlic paste.
Saute it until its raw smell goes off.
Add chopped tomatoes add salt to it.
Saute until it’s tomatoes are mushy.
Now add handful of chopped coriander.
Add the marinated chicken.
Saute it well.
Close it with the lid and cook it until the chicken is cooked well.
Once chicken is done now pour the cooked rice into it.
Pour 1/2 or 1/4 cup basmati rice stock on top of it.
Add food color to it or you can add saffron milk to it.
It’s time to dumb. On top of the heated dosa pan place the biryani vessel on top of it and close the biryani vessel with lid and place the basmati rice stock or basmati rice cooked gruel on top of the biryani vessel lid.
Keep the flame on low and cook it for about 35 mins to 40 mins.
Once done switch off the flame.
Don’t open the vessel immediately.
Leave it for at least 15 mins then open it.
Open the biryani vessel. Mix the rice gently.
Make sure that you don’t break it.
