How to prepare Chicken Cutlets

Chicken Cutlets are one among the best recipe in every Christian Wedding in Kerala. Kerala Chicken Cutlets are fried which are served as appetizers along with Kerala Onion Salad. You can make the cutlets with minced Chicken or shredded chicken. Here is the below recipe for making fried chicken cutlets

Ingredients

Boneless & Skinless Chicken – 1 lb

Potato – 1 big nos

Finely Minced Onions – 1 medium (You can use a food processor or food chopper)

Finely Chopped Green Chillies – 2 or 3 nos

Finely Minced Ginger – 1 tbsp

Finely Minced Garlic – 3 cloves

Curry Leaves (finely shredded) – A few (optional)

Turmeric Powder – 1/4 tbsp

Red Chilly Powder – 1/2 tbsp (Alter according to your spice tolerance)

Coriander Powder – 1 tbsp

Garam Masala Powder – 1/2 to 1 tbsp

Chicken Masala Powder – 1 tbsp (Optional – I used store bought Eastern Fish Masala brand)

Oil – 2 tbsp

Bread Crumbs – 1/2 cup approx

Egg – 1 nos

Oil for frying – As needed

Salt – to taste

Water – as required

For Marinating the Chicken

Turmeric Powder – 1/4 tbsp

Kashmiri Chilly Powder – 1 tbsp (Alter according to your spice tolerance)

Black Pepper Powder – 1/2 tbsp

Ginger Garlic Paste – 1 tbsp

Lemon Juice – 1 tbsp

Salt – to taste

Preparation Method

  • Clean the chicken well and wash it well. Prepare the marinate using the above ingredients and apply it on the chicken. Keep it aside for about 15 mins.
  • Boil the potato along with salt and cook it well for potato for 2 or 3 whistles or you can microwave it. Peel off the skin from potato and mash it without any chunks.
  • Cook the marinated chicken in little water for about 20 minutes until tender. Drain the excess water if any of the shred chicken fully.
  • Heat 2 tbsp oil in pan and sauté onion until it becomes translucent.
  • Then add ginger, garlic, green chilies and curry leaves and sauté for another few more minutes.
  • Add 1/4 tsp turmeric powder, 1/2 tsp red chili powder, 1 tsp coriander powder, 1 tbsp chicken masala powder and 1/2-1 tsp garam masala powder. Saute again until the raw smell goes.
  • Add shredded chicken with salt to taste and mix it once again everything. Sauté again for about 8-10 minutes and keep aside.
  • Allow to cool. Add mashed potatoes and mix everything nicely with your hands.
  • Make the mixture into lemon sized balls using palm and flatten to balls to form cutlets for any shape.
  • Beat the egg and bowl and keep it aside. Tale bread crumbs in a bowl and keep it aside.
  • Take one cutlet dip in beaten eggs and bread crumbs until the cutlet is well coated with bread crumbs.
  • Once each and every cutlets are coated well with bread crumbs then heat a nonstick frying pan and add oil for deep or shallow frying.
  • Place cutlets slowing in frying pan then fry on both sides on medium heat for about 3-4 minutes until golden brown.
  • Drain onto paper towels.
  • Just serve the tasty chicken cutlets with Onion salad or ketchup.
