How to make Brinjal Sambar
Toor dal – ½ cup
Tomato – 1
Cumin seeds – ¼ tbsp
Turmeric powder – ¼ tbsp
Water – 1 cup (approx)
Tamarind – small gooseberry size
brinjal – 5
Onion – 1 (small sized)
Red chili powder – ½ tbsp
Coriander powder – 1 tbsp
Sambar powder – 1 tbsp (Homemade Sambar powder recipe)
Salt – to taste
Mustard seeds – ½ tbsp
Curry leaves – a spring
Chopped cilantro – 1 tbsp
Hing – a pinch
Oil – 1 tbsp
Wash toor dal. Into pressure cooker cook dal for 2 to 3 vessels. When the pressure has subsided open the cooker and mash the dal well and set separate.
Soak tamarind in a cup of warm water and extract tamarind juice.
Heat oil in a kadai, add mustard seeds, after it sputters add cubed onions and tomatoes to it.
Add red chilli, sambar powder, coriander powder. Saute it well for a min then add brinjal in it and saute it well until the raw smell goes away.
Add a tamarind extract and add a cup of water and mix it well and allow to boil.
When everything gets combined garnish it with chopped cilantro and serve it hot with rice!
