How to make Besan Kheer

Besan | kadalai maavu 3 tbsp
Milk 3 cups
Water 1 cup
Ghee 1 tbsp
Cashew nuts 5
Chironji | sara paruppu few (optional)
Sugar 3-4 tbsp
Saffron a pinch
Cardamom powder a pinch
Into a pan add ghee and roast up the cashew nuts and chironji.
Once it turn golden brown take the nuts and keep separate.
Into the same pan add besan and roast it in low flame until it gives a nice aroma and besan turns golden brown color.
Be careful not to get burnt.
Switch off the flame.
Add a cup of water to this .
Whisk it without any lumps.
Add 3 cups of milk to this and switch on the flame. Allow them to boil and for 25 mins. Stir it frequently.
Soak a pinch of saffron in 1 tbsp of warm milk for 5 minutes and then add it to the boiling kheer.
Add sugar after 20 mins. Combine well and boil.
Add the roasted nuts and cardamom powder.
Combine well. Switch off the flame.
Serve it chilled.
